I mean, there’s one ingredient in this recipe. I don’t know if this is just me becoming lazy or whether I’m actually a genius, but when I was producing the video, I got to the end and said, ‘That’s it?’

This is a simple substitution: remove the bread, add a green. The sweetness of collard greens was a surprise to me. They are not a thing in Australia, so I tried them for the first time when I moved to the US.

I love the texture and flavor of the raw leaf. They’re sturdy enough to be rolled but light enough to break through in a bite. The sweet flavor is not overpowering to your ingredients, either. It’s really the perfect vehicle.

The one thing you do need to do to process the leaves is trim the stem, a little. Once you remove it, the whole thing becomes much more malleable.

  3. Tuck ends over and then roll to close.
