Spring has… Well, it’s still springing, tbh, but the fresh spring produce is already arriving in stores! To celebrate the gifts of the season, I love simple preparations like this Asparagus Strata: a silky, savory bread pudding with the addition of the fresh crunch of a whole bunch of Asparagus.

Instructions
  1. Mix everything except bread and asparagus in large mixing bowl.
  2. In a lined or greased oven proof dish, mix the bread and asparagus together.
  3. Pour egg mixture over the top and let sit for 5 minutes to soak.
  4. Cook in 375F/190C oven until centre has set, approx 25 minutes. Serve hot.
Notes

To make this gluten free, simply use gluten free bread.
