Complete Protein Vegan Quinoa Stuffing

One of the few plant-based complete proteins, quinoa adds a huge boost to the satiety of any vegan or vegetarian at your table. Packed with hearty vegetables and chestnuts and filled with traditional flavor, this stuffing will also satisfy any meat eater and have them scooping up more!

So, I learnt this the other day: it’s only called stuffing when it’s stuffed into a bird. If it’s just served on the side, it’s called dressing. Technically, to be vegan, there’s no way I could stuff this into a bird, but if I called this dressing, who would know what I was talking about, amirite?

I didn’t actually need to make this vegan for our dinner party, but I thought, why not challenge myself to make a purely plant-based, absolutely delicious dish that anybody can enjoy. It’s kinda a side dish, but with the amount of vegetables, meaty chestnuts and the hearty, complete protein from quinoa (instead of all that stodgy bread), it could really serve as a whole meal.

Instructions
  1. In a large frypan, saute onions until brown. Add garlic, sage, celery and apple and cook until tender (approx 5 minutes). Transfer to large mixing bowl.
  2. Add thyme, roasted vegetables, chestnuts, almonds and cooked quinoa and mix thoroughly. Garnish with cranberries.
Notes

You can adjust this in as many different ways as you like by changing up the roasted vegetables or the liquid you cook your quinoa in.

If it's your jam, feel free to stick this in a bird! Just make sure it's hot when you do, so that you don't have any bacteria worries.
