Inspired by Thanksgiving excess, these pancakes are fat but, ironically, won’t weigh you down. They feature a boost of vegetable protein and happen to be vegan!

At the beginning of a week of excess and so much cooking, I was inspired to make these fat stack protein pancake sandwiches to fuel us through the busy work days and late prep nights. Instructions
  1. Combine all ingredients except chocolate and cocoa nibs.
  2. Heat a nonstick pan to medium-low. Dole out 1/3 cup portions and keep them fat.
  3. 1. Top one with banana and cocoa nibs then another pancake. Slice then drown in melted chocolate.
