Gym-Worthy Malaysian Satay

A family tradition updated to suit my active lifestyle – this is how I eat this Malaysian dish at home while keeping my healthy lifestyle.

I have fond childhood memories of threading bamboo skewers with chicken and beef that my mum had marinated with deep, sweet spices. I’m so excited that this is the first recipe that I’m sharing with you as it means so much for me to be able to share my heritage, albeit in an updated, healthier way.

I’ve taken out the majority of the sugar and incorporated just a little bit of coconut oil for our fats. I’ve also used seitan as my protein, but you could easily substitute in any meat or vegetarian protein you like, any meat or fish will take well to these flavors!

Instructions
  1. Slice your protein of choice into 1/4 in (1 cm) thick slices.
  2. Place marinade ingredients in food processor and blend, adding water if needed.
  3. Add marinade to protein and leave at least 2 hours.
  4. Thread slices onto your skewers and then grill for 2-3 minutes on each side on a lightly oiled grill pan until nicely charred.
  5. Serve with the fresh cucumber pieces, pineapple and onions.

Use any meat or protein that you like, I was just excited about using new vegan proteins!
