How do you make something as calorie dense as cheesecake into workout fuel? The first step is to look at our favorite micronutrients: protein and fat. If we can remove at least half the fat and increase the protein content, we already have a more balanced treat.
Step two: remove all of the added processed sugar and replace with a touch of natural sugar.

Instructions
Crust
  1. Add the crust ingredients to a food processor. Blend until the mix resembles coarse sand.
  2. Drop into a lined ramekin or cake tin and press with your fingers until the mixture forms into a solid crust. Stick in the fridge while you make the filling.
Filling
  1. Mash filling ingredients until smooth. Add coconut flour until thickened consistency is achieved.
To assemble
  1. Top the crust with the filling. Stick back in the fridge to set it up for at least 20 minutes. You can stick it in the freezer, if you're in a hurry. This won't be super set because we're not adding gelatin or cooking it.
  2. Remove from ramekin/tin and top with almond butter and fruit of your choice.
Notes

If you can't find neufchatel, substitute cream cheese.
