Healthier Giant Meatball

Replacing the components of a traditional meatball with rev’ed up counterparts is the key to making this meatball a cleaner fuel for your body. Definitely not any less delicious, though!

We’re gonna need a bigger boat. But, we’re definitely not going to need bigger pants.
While the world is obsessed with making things bigger, this Healthier Giant Meatball is filled with goodness to replenish your body, fuel muscle growth and feed your glycogen storage without expanding that waistline like most other “giant” foods.
How did I do it? I replaced half of the mince with black beans to maintain protein but remove some of that animal content. Plain white flour as a binder is no more and is instead replaced with the whole grain goodness of steel cut oats.

All of the competents are still here but are replaced with their rev’ed up counterparts.

Instructions
  1. Sautee off onions and garlic until soft. Set aside.
  2. In a food processor, combine all other ingredients, starting with 1 cup of oats.
  3. Process to combine. Leave to sit for 10 minutes for the oats to soak up moisture then add more, if needed to soak up more. Form into hand sized balls and bake at 350F/180C for 45 minutes.
  4. Serve with pasta and sauce, garnished with finely chopped parsley and parmesan.
Notes

These will be slightly gloopier than a standard meatball but go with it. This ensures that the end result is tender, rather than tough.
