Healthier Hummingbird Cake

Y’all, we’re heading south for a taste of Hummingbird. Not the actual bird, but a southern treat named for the buzzy feathered cutie. Apparently, this cake originated in Jamaica and so named because it was sweet enough to attract birds, but either way, the flavor of the Caribbean is loud and proud! Its popularity spread throughout the US when the Jamaican Tourism Board sent out press kits containing a recipe for the treat and, why wouldn’t it?

Instructions
  1. Add wet ingredients to food processor, blitz well.
  2. Whisk dry ingredients together in a bowl then add the wet and stir to combine.
  3. Pour into a lined cake tin and bake at 350F/180C for 1 hour 15 minutes. Cool on a wire rack.
  4. Meanwhile, combine the ingredients for the topping and mix until smooth. The amount of coconut flour will vary, so add a tbsp at a time until it is at the desired consistency (like butter cream). Ice the cake and garnish with dried pineapple flowers and more nuts. Keep refrigerated.
