I’ve removed all the saturated fat and dairy and replaced it with creamy, earthy sunflower seeds.

The simple combination of mushrooms, garlic and onion has a profound umami effect that means that you really don’t need meat in this dish. Add some vegan protein and fat from sunflower seeds and reinforce the flavor with mushroom bouillon and this Christmas classic comes back to life without coming from a can. Win win!

Instructions
  1. In a nutribullet or blender, blitz the sunflower seeds and water into a thick paste.
  2. In a frypan on medium heat, add a little oil then fry onion, garlic and mushrooms until onion has browned and mushrooms are starting to color.
  3. Add green beans, bouillon and pepper and cook until desired doneness of green beans.
  4. Add in sunflower paste and turn off heat and mix thoroughly. Remove to serving dish and garnish with fried onion.
Notes

I like my green beans crunchy still, so I cooked for around 5 minutes. Adjust for your taste.
