Say helloooo to my Healthy Maple Pumpkin Muffins. The rich, spicy, naturally sweet mixture of cinnamon, maple and pumpkin is the perfect afternoon treat.

What do you love about the colder months? For me, it’s the snow, warm hugs and comforting food. Comfort food doesn’t need to be unhealthy, though. Take these warm, spicy muffins: they are gluten and dairy free and get a boost of vitamins and potassium from pumpkin and banana. They’re a win all around!

Instructions
  1. Combine all ingredients. Loosen slightly with water until a stiff batter forms.
  2. 1. Scoop 1/3 cup portions into muffin tin and bake for 15-20 mins on 350°F/180°C
  3. Allow to cool then top with Greek yogurt, cinnamon and cranberry sauce.
Notes

As you know, I watch my sugar intake. So, I've only used a touch of maple syrup for flavor. Adjust as you see fit.
