Deeply caramelized, smoky and sweet, this vegan take on a honey glazed ham will blow your holiday mind!
Honey Glazed Ham was a staple in our household growing up. It’s one of those deli meats in Australia that you could buy sliced and add to sandwiches, so we (as the Wasian family that we are) had ham and salad sandwiches consistently in our lunch boxes. I was one of those kids that sometimes was too lazy to grab a lunch box, so I’d just stuff the sandwich in my bag. By the time lunch came around, it was squished and therefore all the salad had started to turn to mush. I sometimes didn’t eat lunch because of that. One time, in primary (elementary) school, I remember that I forgot that I left a squished sandwich at the bottom of my bag. Let’s just say after a couple of days, that bag had to be disposed of in a Monsters Inc. emergency suits kind of way.
That being said, I have amazing memories of Honey Glazed Ham. For the holidays, mum would roast a whole leg of ham studded with cloves and with a deliciously sweet citrus glaze. The spicy, meaty aromas that wafted around our kitchen were to die for and it’s those memories that I love recreating in our home in Manhattan whenever we host a Christmas dinner.
Nowadays, I would still do a full ham, but this year, I decided to challenge myself to make an entirely plant-based Christmas dinner. I got to thinking: What is big and meaty and can be roasted, glazed and studded like a ham? Tofu? A meat substitute? Ew.
Then, I remembered that I had seen whole roasted cauliflower recipes bopping around Instagram and had been wanting to try it. What if I honey glazed a whole head of cauliflower?! It’d be filling, meaty and substantial; one of my favorite things in the world is roasted cauliflower with the deeply caramelized bits. It carries the smoke flavor incredibly.
This super simple recipe just adds together a wet rub and time in the oven to give you an impressive, hearty main dish that takes the traditional flavors and brings them into a brand new delivery vehicle. Veganlicious!
