Quick Protein English Muffins

An incredibly versatile carbohydrate source, my Protein English Muffins are fortified with plant protein from beans and are made in the microwave in 1 minute, so no need to mess with your oven.
Toast them and slather them in nut butter, serve them with eggs or leave them untoasted and serve as a thick oat cake for a hearty accompaniment to a meat and veg combo.

Instructions
  1. Place everything into a blender and pulse until well combined. You will definitely need to get in there and move everything around as it will be very thick.
  2. Place 1/6 of the mixture into a ramekin or mug.
  3. Microwave on high for 1 minute. Allow to cool slightly before turning out.
  4. Slice and toast. Serve in any way you like!
Notes

You can use this as a breakfast item or leave it untoasted and serve it as a thick oat cake for a great carbohydrate source in a hearty meal.
