Simple, Healthier Tacos al Pastor

Spit-roasted pork in the oven! Whaaaaaaaat?! Try this deliciously and deeply spiced make-at-home version of the Mexican favorite!

So, my house still smells of smoke. So, when I walk to work, I get asked whether I have a spare cigarette. So, what? I got to eat these bad boys by making Tacos al Pastor in my oven! I still managed that smoky flavor (if only by accident) and, as many ingredients as there are, putting it all together couldn’t be easier!

Instructions
  1. Combine marinade ingredients in a large bowl and add pork. Marinade at least 1 hour up to 1 day.
  2. Place down two slices of pineapple and plunge the skewer straight to the bottom. Layer pork to create a big 'ole pile. Use smaller pieces toward the bottom and larger on top.
  3. Roast in a 375/190 oven for 1 1/2 hours. It will smoke up!
  4. Remove and slice. Serve on tortillas with pineapple, onion, cilantro and jalapenos.
Notes

If you are having trouble with the whole thing standing up in the oven, use additional skewers for stability.
