The simplest of pleasures – whole wheat toast smothered in neufchatel and topped with fresh tomato. I use neufchatel to cut out the fat and calories without using a processed fat-reduced product. It’s made with whole milk instead of cream!
The market that we go to every week for our groceries surprises us, every time. I go exploring in the little stand like an excited kid in a candy story, only my candy is new ingredients like these stunning gems of baby tomato.
After finding these, finishing a food photography course and upgrading my lighting rig, I must admit that I spent a couple of hours playing around, plating, taking photos and videos of variations on the simplest of things: tomato toast.
So, while I’ll share the super simple recipe, I’ll fill in my posts, pictures and videos from Tomato week as it goes on!

- 1 slice whole wheat bread toasted
- 3 baby tomatoes sliced
- 1 tbsp neufchatel

- Spread your toast with neufchatel.
- Top with tomato slices and garnish with red pepper flakes and black pepper OR Trader Joe's Everything but the Bagel mix!
