Tomato Week – Tomato and Neufchatel Toast: Super Simple Series

The simplest of pleasures – whole wheat toast smothered in neufchatel and topped with fresh tomato. I use neufchatel to cut out the fat and calories without using a processed fat-reduced product. It’s made with whole milk instead of cream!

The market that we go to every week for our groceries surprises us, every time. I go exploring in the little stand like an excited kid in a candy story, only my candy is new ingredients like these stunning gems of baby tomato.

After finding these, finishing a food photography course and upgrading my lighting rig, I must admit that I spent a couple of hours playing around, plating, taking photos and videos of variations on the simplest of things: tomato toast.

So, while I’ll share the super simple recipe, I’ll fill in my posts, pictures and videos from Tomato week as it goes on!

Instructions
  1. Spread your toast with neufchatel.
  2. Top with tomato slices and garnish with red pepper flakes and black pepper OR Trader Joe's Everything but the Bagel mix!
