Happy Thanksgiving! My gift for the table is these Unsweet Pumpkin Workout Brownies. Inspired by a recipe by Chocolate Covered Katie, I’ve removed all of the added sugar and relied on the natural sweetness of the pumpkin to carry the brownie-ness. It helps that the rich cocoa powder and cacao nibs are a decadence unto themselves.

Instructions
  1. Mix all brownie ingredients until smooth.
  2. Place into lined 9" baking pan and bake at 325°F/165°C for 20-25 mins. Cool.
  3. Meanwhile, combine icing ingredients in separate bowl. Once cake is cooled, top with the icing and cacao nibs and refrigerate again to set.
  4. Slice and serve!
Notes

Sweetener is optional here, but you can definitely add honey, agave syrup or whatever sweetener you like, if you want more than a hint.
